Pork
- 1 pork tenderloin — approximately 500–600 g
- 10 g olive oil
- 4 g salt
- 2 g black pepper

- 75 g Amaretto Ghost Fire
- 100 g unsweetened apple juice
- 35 g honey
- 20 g Dijon mustard
- 15 g apple cider vinegar
- 15 g brown sugar
- 8 g soy sauce
- 5 g minced garlic
- 1 g cinnamon
Method
- Remove any silver skin from the pork tenderloin and pat dry.
- Season all over with the salt and black pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Sear the pork for 2–3 minutes per side, turning until nicely browned all around.
- Remove the pork from the skillet and set aside.
- Reduce the heat to medium.
- Add the apple juice, honey, Dijon, vinegar, brown sugar, soy sauce, garlic and cinnamon.
- Bring to a gentle simmer and cook for 4–5 minutes, stirring occasionally.
- Stir in the Amaretto Ghost Fire.
- Return the pork to the skillet and spoon the glaze over it.
- Transfer to a 190°C / 375°F oven.
- Roast for approximately 15–20 minutes, turning and basting once or twice.
- Remove when the thickest part of the pork reaches 63°C / 145°F.
- Transfer the pork to a cutting board and loosely tent with foil.
- Let rest for 5–10 minutes.
- While the pork rests, return the skillet to the stovetop and simmer the glaze for several minutes until slightly thickened.
- Slice the pork and spoon the reduced glaze over the top.
🍎 Cauldron Tip
Don't add the Amaretto Ghost Fire too early. Adding it toward the end of the glaze keeps more of its distinctive fruity and almond-like character instead of cooking it into the background.
Serving
- Slice the pork into medallions and serve with:

- 50 g Amaretto Ghost Fire
- 30 g maple syrup
- 10 g Dijon mustard
- 10 g apple cider vinegar
- 5 g butter
To Finish
- 4 large eggs
- 60 g shredded cheddar cheese
- 20 g green onion, sliced
- Fresh parsley or cilantro
🔥 Method
- 1. Crisp the potatoes
- Bring a large pot of salted water to a boil.
- Add the diced potatoes and cook for 4–5 minutes.
- Drain thoroughly and allow them to steam-dry for several minutes.
- Heat the olive oil in a large cast-iron or heavy skillet over medium-high heat.
- Add the potatoes.
- Cook for 8–10 minutes, turning occasionally, until golden and crisp.
- 2. Build the hash
- Add the bacon to the skillet.
- Cook for approximately 5 minutes.
- Add the onion and both peppers.
- Cook another 5–7 minutes, until the vegetables soften and the bacon is crisp.
- Add the garlic, smoked paprika, salt and pepper.
- Stir and cook for another minute.
- 3. Make the Ghost Fire glaze
While the hash cooks, combine:

apple cider vinegar
- in a small saucepan.
- Bring to a gentle simmer and cook for 2–3 minutes.
- Remove from the heat and whisk in the butter.
- 4. Bring it together
- Pour approximately half of the glaze over the finished hash.
- Toss gently to coat.
- Sprinkle the cheddar over the top.
- Cover for approximately 1–2 minutes, allowing the cheese to melt.
- 5. Add the eggs
- Cook four eggs however you prefer—fried, poached or sunny-side up.
- For the cookbook, I'd recommend sunny-side up, because the runny yolk becomes part of the sauce.
- Place one egg on each serving.
- Drizzle the remaining Amaretto Ghost Fire glaze over the eggs and hash.
- Finish with green onion and fresh herbs.
🧙 The Cauldron's Tip
Don't put all the Ghost Fire in at once.
The first coating gets cooked into the potatoes and bacon, while the finishing drizzle preserves the brighter flavour and gives you that little burst of ghost-pepper heat when you take a bite.

🍰 Cheesecake
- 600 g full-fat cream cheese, softened
- 150 g granulated sugar
- 150 g sour cream
- 3 large eggs — approximately 150 g
- 10 g vanilla extract
- 5 g lemon juice
- 2 g salt
🍪 Crust
- 200 g graham cracker crumbs
- 75 g unsalted butter, melted
- 25 g brown sugar
- 1 g salt
🔥 Ghost Fire Berry Topping
- 50 g Amaretto Ghost Fire
- 150 g mixed berries — strawberries, raspberries and/or blueberries
- 20 g honey
- 10 g lemon juice
🌰 Finishing
- 30 g toasted sliced almonds
- Fresh berries, as desired
- Optional: lightly whipped cream
Method
- 1. Make the crust
- Preheat the oven to 160°C / 325°F.
- Combine the graham crumbs, melted butter, brown sugar and salt.
- Press firmly into the bottom of a 20 cm / 8-inch springform pan.
- Bake for 8–10 minutes.
- Remove and allow to cool slightly.
- 2. Make the filling
- Beat the softened cream cheese and sugar until smooth.
- Add the sour cream, vanilla, lemon juice and salt.
- Add the eggs one at a time, mixing only until incorporated.
- Don't overbeat the mixture—the goal is a smooth filling without incorporating excessive air.
- Pour over the crust.
- 3. Bake
- Bake at 160°C / 325°F for approximately 55–65 minutes.
- The edges should be set while the centre still has a slight wobble.
- Turn off the oven and leave the cheesecake inside with the door slightly open for 30 minutes.
- Remove and cool completely.
- Refrigerate for at least 4 hours, preferably overnight.
🍓 Make the Ghost Fire Berry Topping
- Place the berries, honey and lemon juice in a small saucepan.
- Heat over medium-low heat for approximately 5 minutes, gently crushing some of the berries.
- Remove from the heat.
- Allow the mixture to cool until just warm.
- Stir in 50 g Amaretto Ghost Fire.
- Refrigerate until completely chilled.
- This is important: we're adding the sauce after cooking so its distinctive flavour isn't lost.
🔥 Assemble
- Remove the chilled cheesecake from the springform pan.
- Spoon the berry mixture over the top.
- Drizzle a small amount of additional Amaretto Ghost Fire over the berries.
- Scatter toasted sliced almonds over the top.
- Add a few fresh berries.
- Serve chilled.
The Cauldron's Tip
Start small.
This isn't supposed to taste like a cheesecake covered in hot sauce. The magic is in getting a little sweet berry → creamy cheesecake → almond → gentle ghost-pepper warmth in each bite.
For guests who want more heat, put a small dish of Amaretto Ghost Fire on the table and let them add their own.

🥩 Meatballs
- 500 g ground pork
- 250 g lean ground beef
- 75 g panko breadcrumbs
- 60 g milk
- 1 large egg — approximately 50 g
- 40 g finely grated Parmesan
- 30 g yellow onion, very finely minced
- 10 g garlic, minced
- 8 g Worcestershire sauce
- 5 g Dijon mustard
- 4 g salt
- 2 g black pepper
- 2 g dried parsley

- 100 g Amaretto Ghost Fire
- 50 g honey
- 30 g soy sauce
- 20 g apple cider vinegar
- 15 g brown sugar
- 10 g Dijon mustard
- 5 g garlic, minced
- 5 g butter
🌿 To Finish
- 20 g sliced green onion
- 15 g toasted sliced almonds
- Fresh parsley or cilantro
Method
- 1. Prepare the meatball mixture
- Preheat oven to 200°C / 400°F.
- Combine the panko and milk in a large bowl.
- Let stand for 3–5 minutes.
- Add the pork, beef, egg, Parmesan, onion, garlic, Worcestershire, Dijon, salt, pepper and parsley.
- Mix gently with your hands until just combined.
- Don't overmix. That's the secret to keeping the meatballs tender.
- 2. Form the meatballs
- Form into approximately 30 meatballs, around 30 g each.
- Place them on a parchment-lined baking sheet with a little space between each one.
- 3. Bake
- Bake at 200°C / 400°F for approximately 18–22 minutes, turning once halfway through.
- Cook until the centre reaches 71°C / 160°F.
- 4. Make the glaze
While the meatballs cook, combine:

soy sauce
apple cider vinegar
brown sugar
Dijon
garlic
- in a saucepan.
- Bring to a gentle simmer over medium-low heat.
- Cook for 5–7 minutes, stirring frequently, until slightly thickened.
- Remove from heat and whisk in the butter.
- 5. Glaze
- Transfer the cooked meatballs to a large bowl.
- Pour approximately two-thirds of the glaze over them and gently toss.
- Return them to the baking sheet.
- Bake for another 3–4 minutes to set the glaze.
- Transfer to a serving dish and drizzle with the remaining glaze.
- Finish with green onion, toasted almonds and fresh herbs.
🧙 The Cauldron's Tip
These are fantastic served straight from the oven, but they're also excellent party food.
Put them in a slow cooker on LOW/WARM and keep a small bowl of Amaretto Ghost Fire beside them for anyone who wants an extra kick.

- 15 g honey
- 2 g fresh thyme leaves
- 1 g black pepper
Finishing
- 35 g Amaretto Ghost Fire
- 30 g arugula
- 15 g toasted sliced almonds
- 10 g balsamic glaze
- 1 g flaky sea salt

- 1. Prepare
- Preheat the oven to 220°C / 425°F.
- Place the flatbread on a baking sheet.
- Brush lightly with olive oil.
- Arrange the mozzarella evenly over the surface.
- Add the sliced peach, red onion and prosciutto.
- Drizzle the honey over everything.
- Sprinkle with thyme and black pepper.
- 2. Bake
- Bake for 10–12 minutes, until the edges are crisp and the cheese is melted.
- For extra browning, switch to the broiler for 1–2 minutes at the end, watching carefully.
- 3. Finish
- Remove the flatbread from the oven.
- Scatter the fresh arugula over the top.
- Drizzle Amaretto Ghost Fire across the flatbread.
- Add the toasted almonds.
- Drizzle lightly with balsamic glaze.
- Finish with a small pinch of flaky sea salt.
- Slice into 6–8 pieces and serve immediately.

- 500 g raw large shrimp, peeled and deveined
- 60 g Amaretto Ghost Fire

Cool Lime Slaw
- 200 g finely shredded green cabbage
- 50 g shredded carrot
- 40 g mayonnaise

To Serve
- 8 small flour or corn tortillas
- 80 g diced avocado
- 40 g crumbled feta or cotija cheese

- 1. Make the slaw
- Combine the cabbage and carrot in a bowl.
- In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, honey, salt and pepper.
- Pour over the vegetables and toss well.
- Refrigerate while preparing the shrimp.
- 2. Prepare the shrimp
- Pat the shrimp dry.
- In a bowl, combine Amaretto Ghost Fire, honey, lime juice, olive oil, garlic and smoked paprika.
- Add the shrimp and toss until coated.
- Let the shrimp marinate for 10–15 minutes.
- Don't marinate for hours. The acidity in the lime juice can start changing the texture of the shrimp.
- 3. Cook
- Heat a large skillet over medium-high heat.
- Add the shrimp and the marinade.
- Cook for approximately 2 minutes per side, depending on size.
- Continue cooking until the shrimp are opaque and reach approximately 63°C / 145°F.
- Remove from the heat immediately so they don't become rubbery.
- 4. Build the tacos
- Warm the tortillas.
- Add a layer of the cool lime slaw.
- Add 2–3 shrimp to each taco.
- Add diced avocado.
- Sprinkle with feta or cotija.
- Finish with green onion and fresh cilantro.
- Serve with lime wedges.

For a hotter Ghost Fire taco, drizzle another 5–10 g of Amaretto Ghost Fire over the finished tacos.
For a milder version, keep the shrimp quantity the same but reduce the sauce in the marinade to 40 g.

- 1.2 kg chicken wings
- 10 g baking powder
- 5 g salt
- 2 g black pepper
- 2 g garlic powder

- 100 g Amaretto Ghost Fire
- 45 g honey
- 25 g brown sugar
- 20 g soy sauce
- 15 g apple cider vinegar
- 10 g Dijon mustard
- 5 g minced garlic
- 5 g butter
Method
- Preheat oven to 220°C / 425°F.
- Line a large baking sheet with parchment and place a wire rack over it.
- Pat the chicken wings very dry with paper towel. This is important for crisp skin.
- Combine the baking powder, salt, black pepper and garlic powder.
- Toss the wings thoroughly with the seasoning mixture.
- Arrange the wings in a single layer on the rack.
- Bake for 25 minutes.
- Turn the wings and bake another 15–20 minutes, until deeply browned and crisp.
- While the wings cook, combine the Amaretto Ghost Fire, honey, brown sugar, soy sauce, vinegar, Dijon and garlic in a small saucepan.
- Bring to a gentle simmer over medium-low heat.
- Simmer for approximately 5–7 minutes, stirring frequently, until the glaze becomes slightly thicker and glossy.
- Remove from the heat and whisk in the butter.
- Transfer the cooked wings to a large bowl.
- Pour approximately two-thirds of the glaze over the wings and toss until completely coated.
- Return the glazed wings to the rack.
- Increase the oven to 230°C / 450°F and bake for another 3–5 minutes, just until the glaze becomes sticky and caramelized.
- Remove and toss with the remaining glaze.
- Serve immediately.
🔥 The Cauldron's Tip
Don't drown the wings. The first coating should be fairly light. The final drizzle of glaze gives you that beautiful sticky finish while allowing the Amaretto Ghost Fire flavour to remain noticeable.

- Sear the chicken thighs for approximately 3–4 minutes per side, until nicely browned.
- Reduce the heat and pour the sauce over the chicken.

Method
- Butter one side of each bread slice.
- Place two slices butter-side down.
- Layer cheddar, Monterey Jack, pineapple and red onion.

- Add cilantro.

- Heat a skillet over medium-low heat.
- Cook sandwiches slowly for approximately 3–4 minutes per side.
- Cover briefly if necessary to help melt the cheese.
